Cheese and Apple Soup
Melt 1/3 cup butter in saucepan.
Whisk in 1/3 cup flour and 1/2 tsp salt.
Stir until golden, then whisk in 2 1/2 cups milk.
Cook until thickened.
Then whisk in 3 cups shredded Gouda cheese (I also used a little bit of cheddar).
Whisk until smooth.
Stir in 2 cups of apple cider and warm through.
Garnish with chives and apples sliced very thin.
