Marry me chicken gnocchi soup

found this recipe on instagram and it is so delicious! The original recipe is found on whatsmomcookin.com. I adapted it a little bit, so here is my version: 





Marry Me Chicken & Gnocchi Soup


Season two fresh or thawed chicken breasts generously on both sides with garlic and herb seasoning, salt and pepper. In a skillet on med-high, heat 1 Tbsp olive oil and sear each chicken breast on both sides. Then add 1/2-3/4 cup chicken broth, cover with lid and turn heat down to low. 


While the chicken cooks, melt 2 tbsp of butter and 1 tbsp of the sun dried tomato oil in a large pot. Add a diced onion, 2 diced celery ribs and 3 diced carrots. Season with salt and pepper, garlic and herb seasoning(I love the one from Costco), 1 tsp herbs de Provence and 1/4 tsp red pepper flakes.

Cook for 5 minutes. Stir in 1/2 cup of chopped sun dried tomatoes. Then stir in 3 tbsp of tomato paste and 6 minced garlic cloves. Add 6 cups of chicken broth and 1 cup of heavy cream. Bring to a boil.


Remove the chicken from the skillet, but reserve the cooking liquid. Shred chicken with two forks and add to soup pot along with reserved cooking liquid from skillet. Then add 1 lb of gnocchi and boil for about  10-20 minutes until the gnocchi floats to the top and veggies are tender. 


Turn off the heat and stir in 4 oz of room temperature cream cheese and 1/2 cup freshly grated Parmesan. Then stir in 2 cups of fresh chopped baby spinach and 2 tbsp of chopped fresh basil. Stir well and season to taste if needed. Serve hot and enjoy!
